Water with quantities of dissolved carbon dioxide giving it the fizz. Also known as Club Soda, Soda Water, Fizzy Water, Seltzer Water, Sparkling Water. The CO2 gives the water a slightly bitter taste as opposed to plain water. The fizz and bubbles add texture and sparkle to a cocktail, enhancing many flavours as gas is released making flavour molecules more volatile. Very cold soda water will hold on to its carbon dioxied longer and appear 'flatter', only to release a mass of CO2 when warmed up in the mouth.
