I must thank Ian Wisniewski for his article about ageing warehouses, which can be found in issue 36. Having only discovered whisky a few months ago I found it fascinating and learnt a few new things. Ageing is clearly not an exact science, but if anyone could tell me which, if any, scientific instruments are used in the ageing warehouse then I would be most grateful.
