Gus O'Connors pub in Doolin is a lovely place to spend time, as long as it's not too packed.

I think a lot of the pubs that have stayed the same in Dublin were mentioned in James Joyce's Ulyses. I'm assuming this is the reason they haven't changed...

The Crown Bar, Belfast - hardly an original nomination but no less worthwhile for all that:

The bar is owned by the National Trust and is just over the road from the Europa Bus Station and Great Victoria Street Station.

This is not a pub, but certainly one of the best whisky bars I've ever been to (I've not been to any good ones in Scotland though)... All the lovely bottles of whisky lined up above the bar make an impressive sight. I had Caol Ila 12 first followed by Nikka Sendai 12, and my wife had Cragganmore 1987 Distillers Edition. All were great drams, but the latter one was simply exceptional...
