What do you do with the empties?

Normal bottles go straight into the recycling bin, but I keep the corks for use if a cork breaks on another bottle.

Smaller bottles (35cl, 20cl and such) are kept for pouring samples into. Also used when the level in the normal bottles get low (pour the whisky into the smaller bottles to hinder too much oxidation).

I have considered both the label peeler method (for saving tasting notes and labels in one place) or the digital photos that mikey mentioned.

For those interested in an inexpensive way to keep labels, this was posted in the comments at a wine blog, specifically referring to the sheets at LFW:

Those label peelers seem to just be transparent adhesive mylar. We used the stuff in a library to cover books as protection. You should be able to find it in rolls at somewhere like Staples or OfficeMax.

Admitted OCD? Nah, I'd have to create a new category.
