If I've had a few too many, then it's fair to say that I'm probably not going to appreciate the subleties and complexities of a particularly special dram.
So I tend to go for a quaffing malt, or maybe just a heavy Islay dram.
2 things for a night of overindulgence:
22 oz. cherry slurpee from 7-11.
theraflu shooter: 1 packet of theraflu mixed into a 1.5 oz of boiling water. stir and quaff in a single shot.

I always go for water, too. Water and crackers, usually. Not very exciting, but it keeps me upright and (eventually) ready for more of the good stuff.
Anytime I'm even slightly tipsy around bedtime, I drink a full glass of water before climbing into bed. It usually means a trip to the bathroom during the night, but it's better than hang-over symptoms.
