How about I just mention the highlights? (I don't want the Mrs spotting this and screeching 'HOW many bottles?' at me.)

Dunville's Three Crowns early 1920s bottle.
Old Comber (two of 'em!)
About six or seven different one-off single cask Bushmills bottlings dating from the Nineties to the present day
Various Midleton Rares of different vintages
Bushmills 1930s bottling
Bushmills 'liqueur' 1960s bottling (the precursor to Black Bush)
Jameson 15 yo Pot Still Millennium bottling
Jameson Marconi bottling
Jameson Bow Street bottling
Powers 1970s bottling

Some of the above came to me via my old fella, who isn't permitted to drink as much as he would like, under doctor's orders.
In addition to those, I keep an ever-rotating stock of Irish whiskey to hand. These include some of Bushmills' independent bottlings, some decent pure pot still bottles and a fair sampling of Cooley's output.
The ones I try never to be without are the splendid Bushmills 16 yo, Redbreast, Green Spot, and Connemara Cask Strength.

I do drink non-Irish whiskies, of course. I just don't tend to keep more than two or three non-Irish whiskies in the house. I'll certainly drink them outside the house, and especially outside the country, as apart from the ubiquitous Jameson, it's very hard to find decent Irish whiskeys in a bar outside of Ireland.
I'm currently working my way through that strange Edradour Tokaji finish bottling from a couple of years back as we speak.
When I'm done with that, there's a Glenfiddich waiting for me to try.
I'm quite fond of the Yamazaki output, but don't currently have any around the house.
And I try to keep a bottle or two of Bourbon or Tennessee whiskey in the house too. Currently got a Buffalo Trace and a Gentleman Jack open, as well as a Jim Beam Rye and a bottle of Mellow Corn (which I bought purely out of curiosity to see if it was as oily as has been claimed; it is.)
