I'd like to say mellow, then sherried, then peaty whiskies. You can do this within the booths, but not on a larger scale. I'd remember to eat a meal beforehand, and eat during the event if there is finger food available (there was at Spirit of Toronto).
I would add that you might want to formulate questions beforehand about the whiskies you are likely to try if you are curious about them (eg. "what persentage of Talisker 10 is sherried" or "do you guys chill-filter your whiskies"?). Don't expect people pouring the drams to have detailed inside info, however some do. It's an opportunity to get info as well as try new drams.
