Purging still between runs

Postby Bruichladdict » Mon Aug 04, 2008 1:58 pm

Has anyone ever wondered or asked the question of a distiller:
"When producing peated and unpeated whisky, what do you do between runs to make sure peat doesn't make it into unwanted places? What do you do to the stills to clean them or do you use separate stills altogether?"

Anyone with knowledge or answers?

Barry Scott recommends Cillit Bang!

I don't know, it's an interesting question. I can say that Cooley makes peated and unpeated whiskeys and doesn't have separate pot stills for these. I don't know what they do in between runs.

But I would guess that rather than switching between peated and unpeated, that a distiller with multiple stills will dedicate a certain still to peated or unpeated to avoid taste contamintion no matter how minute it is. Of course if there is no still available and the only one is the opposite, then you dont have any recourse but use that one.

At Springbank they distill Hazelburn, Springbank, Longrow, Longrow, Springbank and finally Hazelburn. They don't do anything to the stills in between peating levels and they can simply 'blend away' variations through various bottling runs. I specifically asked this question when I took the course.

For a moment there I thought you were serious and almost gagged on my coffee. It would add an interesting flavour to the finished product, though, wouldn't it?
