Tasting Notes

Dave Broom

Nose
A pinkish cast to it. Chimney smoke, with a hint of burning wool. Cleaning peat ashes out of the hearth, then sweet fruit comes in over the top.
Palate
Positive palate, wine gums mixed with coal dust, a light cereal note. Some rubber (sulphur) which might be a sign of youth.
Finish
Fruity.
Comment
It is young and showing great promise. Keep watching this with interest.

Arthur Motley

Nose
Sour fruits and floor polish. Wet wood smoke, fennel and an underlying chalkiness. A dry, smoky and medical nose.
Palate
Chicory, fennel and sweet, smoked ham.
Finish
Drying smoke.
Comment
Youthful, fun, smoked food character. A lack of the complexities that are brought on by aging can sometimes mean clarity. Has the clarity of a bell and is an immensely promising spirit.
