- Which Sauternes? The flavours of childhood, rather than sophistication.

- Sweet and malty: hay, fruit salad, ripe pear, pineapple, quince, lemon, barley sugar, candy floss. Gets drier, and woodier, with time.

- Silky and soft with fair balance. The sweetness goes quickly, leaving crisp malt and light spices.

- Bitter orange nut.

- The wood has a fair say in things, the Sauternes playing a subtle role in it all.
