Nose
Tangy, somewhat spirity. Cider cellar. Wet leaves. Touch of earthy mushrooms. Pear drop. Becomes cheesy. Palate
Biting. Sour apple, pear drop. The cheesy notes show up. Finish
Fizzy, spicy and nutty. Turning bitter. Comment
Nose and palate are a bit agressive with a lingering sourness which is disturbing. A prickly character. Water smooths the flavours over but this is not enough.
Dave Broom
Nose
Smooth and soft to begin, then some light smoke, bourbon biscuit, roast beef gravy, mint all balanced by gentle vanilla ice cream. Palate
Praline, butter/cream. Meaty and rich in the centre with gentle oak. Substantial with richness. Finish
Sweet then smoky/burnt. Comment
This is still improving. A couple more years in cask would have improved it further.
