Initially this is all fennel tops, then it deepens and sweetens: vanilla, maple syrup, spun sugar. Bourbon?
Palate
Immediate impact of spice: nutmeg, allspice and toasty grip. Good with water. Mature, woody, smooth.
Finish
Firms up nicely.
Comment
Want to get bourbon drinkers into whisky, give ‘em grain! Maybe not 40 Years Old grain but it could be the way in.

Nose
Pleasant tanginess. Fresh crushed white grapes (Italia). Cider cellar. Then freshly baked fruit cake. Hint of praline.
Palate
More sherried than on the nose. Rubbery. Asmoky note (like a dying fire). Coffee toffee.
Finish
Long, liquoriced. Spicy dryness.
Comment
Another classic sherry, especially on the palate. No water please.
