Nose
Oak has the word with a sherry accent. Damp cellar, earth floor, dark chocolate. Hard to find a peat note.
Palate
Sweet and bitter. Oak dominating. Oxtail broth. Can’t find the peat.
Finish
Bittersweet. Lingering. Drying off on spices.
Comment
Old age has completely integrated peat and smoke. Oak overpowers the marine character. A splash of water does not help.

Dave Broom
Nose
Concentrated. Dry amontillado sherry, toasted almond. Fungal, rancio notes: cheese rind, porcini water. Phenolics have also reduced to their essence: lobster creels, brine. Spent fire.
Palate
Nutty oak with some tinned fruit salad coming through. A slight resinous quality alongside ashes.
Finish
Lightly spiced, slightly bitter.
Comment
The peat drifts in and out like cigar smoke on your skin the morning after.
