- Nose
- Oak has the word with a sherry accent. Damp cellar, earth floor, dark chocolate. Hard to find a peat note.
- Palate
- Sweet and bitter. Oak dominating. Oxtail broth. Can't find the peat.
- Finish
- Bittersweet. Lingering. Drying off on spices.
- Comment
- Old age has completely integrated peat and smoke. Oak overpowers the marine character. A splash of water does not help.

- Nose
- Concentrated. Dry amontillado sherry, toasted almond. Fungal, rancio notes: cheese rind, porcini water. Phenolics have also reduced to their essence: lobster creels, brine. Spent fire.
- Palate
- Nutty oak with some tinned fruit salad coming through. A slight resinous quality alongside ashes.
- Finish
- Lightly spiced, slightly bitter.
- Comment
- The peat drifts in and out like cigar smoke on your skin the morning after.
