- Syrupy. Full of flavour. Good oak extract, sherry, malt, fruit.

- Chewy and thick. Crème brûlée, nuts, pecan pie, dried peels. With water it's like a just-baked fruit cake. Sultana, buttered muffin, clootie dumpling.
