- Lean and sappy. Quite intense: white pepper, powdered ginger/coriander. Softens slightly into toffee apple, toasted tea cake, cigar box.

- Soft, syrupy feel within a pretty firm, dry structure. Serious.

- Old fashioned in every sense and none the worse for that.
