- Sherried. Deep earthiness. Damson jam. Dates,treacle. Fig syrup.
- Palate
- Sweet and concentrated. Dark dry fruit (prunes,sultanas,dates) like alsacian Christmas cakes. Wood
shows off at mid-palate.Bitter note.
- Finish
- Sweet and bitter. Dark chocolate.
- Comment
- The type of maturation has deeply influenced the malt. Elegant and rich but may be a bit too much… like
Xmas pudding!

- Tightly clustered,well-balanced, vanilla,oak,citrus,honey and nutmeg.
- Palate
- Light creamyness and mellow dryness,then vanilla sweetness, orange marmalade,cooked apples,
citrus zest freshness and subtle oak.
- Finish
- Lightly spicy oak balanced by diminishing sweetness.
- Comment
- A constantly evolving balance of richness and dryness.
