Casks remain one of the most discussed themes in the world of whisky. When choosing how to mature their spirits, the underlying challenge for distillers is the same: sourcing vessels capable of delivering consistency, character, and a strong story. Today, a new chapter is being written by Tonelería del Sur, the Andalucían cooperage behind Casknolia, with the launch of an ultra-limited range of luxury casks designed for the ageing of old and rare whiskies.

Known as the Master Cooper Edition, this new range represents the most exclusive offering yet from the Casknolia portfolio and the culmination of more than a decade of development and dialogue with sawmills, winemakers, and distillers. Crafted from specially chosen air-dried Pennsylvanian oak and seasoned for a minimum of two years with exceptionally old fine wines from leading independent producers in Montilla-Moriles and Jerez, the casks will be available in limited quantities from summer 2026. Uniting the craft of coopering and the heritage of family-owned bodegas, the result is rare thing: an entirely new category of cask.

Founded in 1974 in the town of Montilla, the family-owned Tonelería del Sur is led by second-generation cooper Rafa Cabello, who grew up surrounded by the rhythms of the cooperage. A certified master cooper since 2007, Cabello is a passionate ambassador not only for his craft, but for the wines of his native region. Montilla lies at the heart of one of Andalucía’s historic wine landscapes, in a region known as the spiritual home of the famous Pedro Ximénez grape. This sweet and aromatic variety is known to many for its use in the production of PX sherry, but in the Designation of Origin Montilla-Moriles, PX’s full potential is realised through the production of distinctly aromatic styles of dry fino, oloroso, amontillado, and sweet PX wines.

When Cabello assumed leadership of the family firm in 2005, he made it his mission to champion the quality, heritage, and maturation potential of Montilla-Moriles wine, while also showcasing the very best from the bodegas of neighbouring Jerez. The result was Casknolia — launched in 2014 as the cooperage’s premium brand. Cabello’s approach deliberately broke with convention, adopting an innovative strategy in what can be fairly described as a very traditional industry.

“I believe our casks should offer more than just exceptional maturation potential,” Cabello explains. “We want distillers to proudly display our casks in their warehouses and feel confident in highlighting them in product narratives as recognisable markers of quality.” Thinking of Casknolia as a brand in its own right and Cabello’s increasing focus on the whisky industry won the company recognition by Whisky Magazine’s Icons of Whisky in 2024, with Casknolia named Cooperage of the Year and Cabello as Cooper of the Year. This was followed in 2026 with Casknolia once again being named Cooperage of the Year at the Icons of Whisky Global awards in London.

But Casknolia is far from all style and no substance. For Cabello, the use of quality, ‘ready-to-drink’ wine for seasoning has always been central to his philosophy. Maintaining close relationships with bodegas ensures that the casks are filled with wines with real character, and in many cases the cooperage sells the wine aged in its barrels back to the local trade for blending and bottling. “We act as a genuine bridge between distillers and bodegas. By understanding the needs of both sides, we create casks that elevate the flavour of both the wines and the spirits stored within them.”

The Master Cooper Edition is the natural conclusion of the Casknolia journey and takes this philosophy a step further. “For the Master Cooper casks, my first customer is the bodega,” Cabello says. “They must be happy with the organoleptic qualities imparted by the cask, or they wouldn’t agree to use them for ageing their oldest and rarest wines. It’s taken a decade of technical research and dialogue with winemakers and distillers to take this concept from an idea to a finished product worthy of ageing whisky makers’ old, rare, and limited-edition spirits.”

To meet those expectations, the Master Cooper Edition casks are constructed from the highest grade of exceptionally tight-grained Pennsylvanian white oak, personally selected by Cabello. After air drying for a minimum of 36 months to realise its aromatic potential, the oak is heavily charred, creating a deep layer of activated wood.

This attention to detail extends throughout the design. Every cask is finished to the highest standard and fitted with genuine copper hoops, while laser-etched ends carry the specific details of the cask’s construction and seasoning wine. The result is a distinctive, premium appearance befitting its role as a flagship product.

But the wines are what truly sets this new range apart. For the inaugural Master Cooper Edition release in 2026, Cabello partnered with some of Andalucía’s most respected family-owned bodegas to create a small parcel of casks seasoned with 21 distinct old and rare wines. Partners include the lauded Bodegas Alvear and Toro Albalá in Montilla-Moriles, with Bodegas J Ferris and Bodegas Lustau representing the sherry designation of origin.

Each partner has collaborated with Casknolia for several years in developing the concept and is proud to have its name displayed on every cask end. These one-of-a-kind collaborations see the aromatic potential of their finest wines — many over 35 years old and qualifying as VORS — brought to bear for the first time on the maturation of whisky.

The preparation process begins with a six-month seasoning of each new oak cask with young wine, before passing to the custodianship of the bodega partner for use in the maturation of exceptional old stocks. These include expressions such as Alvear’s Oloroso Catón, Toro Albalá’s vintage Poley Pedro Ximénez, Lustau’s Rio Viejo oloroso, and J Ferris’s highly limited amontillado and palo cortado. Uniquely, Casknolia’s partnership with J Ferris will see what’s believed to be an industry first: a cask seasoned with VORS Tintilla de Rota — a deeply aromatic wine produced in infinitesimally small volumes from an indigenous Andalucían blue grape of the same name.

The result is something rather different from the conventional idea of a ‘seasoned’ cask. These vessels are not simply filled with wine as part of their preparation for use by distillers: they have actively played a role in maturing some of Spain’s most celebrated old wines. The culmination of several lifetimes of coopering, winemaking, and seasoning expertise, the Master Cooper Edition casks marry together the longevity and active character of new oak with the depth of flavour and gravitas previously limited to ‘ex-bodega’ casks. In doing so, Cabello has created a new category of luxury cask for the whisky industry — one that not only offers unrivalled flavour potential but a distinctive, authentic, and ownable wine story with unprecedented ultra-premium credentials.
