Cocktail of the Week: Alice

This is a lesser-known Scotch cocktail called the ‘Alice’, or sometimes ‘Alice Mine’, or ‘Alice, Mine’.

The Alice is unusual not only in that it uses Scotch, but because it uses the whisky more as flavouring than body.

Kummel is a sweet liqueur made with caraway seed (‘Kümmel’ in German), cumin and fennel. Its herbaceous spiciness pairs perfectly with the bittersweet vermouth, and the whole is rounded out by the Scotch.

This recipe is taken from the 1930 Savoy Cocktail Book, which was compiled by bartender Harry Craddock of London’s Savoy Hotel and is still in print — many of its 750 cocktail recipes are still popular today.

Ingredients
½ Italian Vermouth (1 oz/30 ml)
½ Kummel (1 oz/30 ml)
2 dashes Scotch whisky (1 tsp)

Method
Shake well [with ice] and strain into a cocktail glass.

[Or, as today happens to be the 156-year anniversary of the publication of Lewis Carroll’s whimsical Alice’s Adventures in Wonderland, buck tradition and serve in a dainty china teacup instead.]
