Cocktail of the week: King's Cave Sour

This week, we're celebrating World Whisky Day with a King's Cave Sour, thanks to this recipe from Lagg Distillery

Our cocktail recipe this week comes from Lagg Distillery. Opened in 2019, Lagg was the second distillery from the Isle of Arran Distillers, whose Lochranza distillery was founded in 1995.

 

Lagg focuses on peated spirit — its "house style", according to distillery manager Graham Omand, is embodied in the core range Kilmory Edition single malt, for which peated spirit is matured in first-fill bourbon casks.

 

The King's Cave Sour is named for a cave on Arran in which Robert the Bruce is said to have sheltered (and been inspired by an enterprising spider's web building). Whether or not the legend holds any water, this cocktail recipe, which pairs the smoky Kilmory Edition with bitter and sour tones, holds inspiration of its own — sans spider.

 

Ingredients:

35ml Lagg Single Malt Kilmory
15ml Aperol
25ml lemon
15ml sugar syrup
1 egg white
1 dash Angostura
1 dash orange bitters

Method:

Add ingredients to a shaker filled with ice. Shake and strain into a rocks glass. Top with a dash of Angostura bitters and garnish with orange peel.
