Copenhagen Distillery has announced the launch of Rare No.4, the latest iteration in the distillery's experimental whisky series.
Within its Rare series, Copenhagen has explored different wheat grains, to explore the whisky profile they create. Previous iterations have included emmer and einkorn. This fourth bottling is centred on spelt, which the distillery says brings a "complex whole grain flavour".
The spelt new make whisky was matured in Hungarian oak casks, the distillery's signature maturation style. Copenhagen says the result is a whisky with notes of sweet cerated, papaya, and jasmine tea, with umami undertones, roasted bread and nuts, and raw cocoa.
Lasse Öznek, master distiller, commented: "We’re very excited to launch our newest iteration of Rare. This range gives us the freedom to explore flavours and ingredients rarely seen in traditional whiskies. It’s a space for creative experimentation, where we embrace the versatility of spirits and rediscover forgotten grains such as spelt, elevating them through our innovative, modern approach.

Copenhagen Distillery's whisky is made with 100 per cent organic Danish ingredients. This ethos recently resulted it it becoming a founding member of the Danish Whisky Manifesto, which laid down principles that aim to strengthen and protect Danish whisky as a category.
