English distillery Fielden has announced new whisky Hazybower. The release follows last year's Hedgerow in the distillery's Fieldnotes collection.
The collection pays tribute to the English countryside, and will be a four-part exploration of the "flavour pillars" present in Fielden's flagship rye whisky. The four "chapters" of the collection will highlight different elements in the ecosystem of a field. Hedgerow, the first "chapter", explored the flora in the hedgerow borders of fields, while Hazybower is inspired by the wild herbs and flowers that grown amongst the grain in biodiverse fields.
Hazybower is made from a blend of heritage rye, wheat, and barley. Fielden says the grains were grown as "diverse field mixtures", before distilling in both pot and column stills. The spirit was then matured primarily in American oak casks that had previously held Fielden's signature rye whisky. Some of the spirit was fully matured in a Hungarian oak Tokaji wine cask.
Fielden whiskymaker Chico Rosa commented: “While conventional agriculture often suppresses diversity, we aim to champion it here at Fielden. These plants aren’t just beautiful — they contribute to healthy soils, resilient crops and complex, layered flavour. With Hazybower, we are bringing that diversity into your glass via the flavour and texture of this spirit.
“The result is a whisky that evokes hazy summer days in the English countryside — freshly cut herbs, meadow flowers and lemon tart in the evening sun. Balanced by our signature spice of rye and a mellow freshness, we hope that Hazybower is both a sensory journey and a statement of our regenerative farming values worth sipping.”
Fielden Hazybower (46.3% ABV, RRP £102.50) will be available from 6 August via fielden.com and Berry Bros & Rudd.
