French distillery Hautes Glaces’ grain-to-bottle whisky is now available in the UK. The distillery was founded in 2009 by Frédéric Revol, with the aim to put terroir “at the heart of the taste” of its spirits. Hautes Glaces is based in the French Alps, where it creates its whisky entirely from grain to bottle in the Trièves.
Hautes Glaces holds micro-provenance at the forefront of its mission. Revol comments: “We look beyond the barrel and blending, focusing first and foremost on the grain to create whiskies that have the taste and vitality of our home, the awe-inspiring mountain region of the French Alps – where each whisky is made from start to finish.”
The distillery aims to use the fewest resources possible, and its organic farm places focus on regenerative agriculture to encourage soil vitality and biodiversity – a process which turns “environmental constraints into a source of creativity,” according to Revol.
The distillery has two permanent vintages, Vulson and Indigene. The latter is Hautes Glaces’ interpretation of single malt Scotch whisky, made from 100 per cent malted barley and matured in French oak casks. Vulson is a triple-distilled rye-based eau de vie made from malted rye, described as Indigene’s “punchy counterpart”. The two permanent vintages are complemented by limited-edition exploratory collection Epistémè.
The Hautes Glaces permanent collection, as well as a limited amount of its Epistémè collection, is now available from Master of Malt and the Whisky Exchange.
