The Isle of Raasay Distillery has released the second edition of its Dùn Cana Sherry Quarter Cask single malt whisky.
The annual release explores different cask varieties to Isle of Raasay’s signature single malt. For the second edition, peated and unpeated spirit is matured separately in ex-American rye casks, which previously held Woodford Reserve, before a secondary six-month maturation in Pedro Ximénez and oloroso sherry quarter casks.
The distillery says the use of the smaller 125-litre casks “accelerates the maturation process” to deepen the resulting flavours of pepper spice, sultanas, vanilla toffee, and salty chocolate.
The whisky is named for Dùn Cana, the highest point on Raasay, as a tribute to the landscape of the distillery’s home.
Master distiller Alasdair Day shared, “The Dùn Cana Sherry Quarter Cask Release is a great addition to our core product offering at Isle of Raasay Distillery, as it allows further discovery into our style of whisky making whilst presenting the spirit with a distinctively different cask influence than our signature single malt.”
First released in 2021, Isle of Raasay’s signature single malt is made with its ‘Na Sia’ recipe of six cask types.
The Dùn Cana Sherry Quarter Cask Release: Second Edition (52% ABV) is bottled with its natural colour and is non-chill filtered. The limited-edition release is available now in selected markets and online at RRP £85.
