This small-batch four-month-old rye, which has been aged in a 50-litre shaved, toasted and recharred Speyside cask, is the Staffordshire company’s first product.

It is a significant moment for Jeremy Roney and Paul Horrocks, who founded the spirit producer in September 2020 and have spent the last year establishing the business while maintaining full-time working roles.

“We can’t wait to share the product and our plans to establish Mercia Whisky in the Midlands as a producer of quality rye whisky in the coming years,” said Roney.

Horrocks added, “We share a strong passion for whisky and we launched Mercia Whisky because of that. For us, this is just the start.”

Mercia Whisky describes the spirit as possessing nutty, brown sugar and coffee notes, among other sweet flavours.

Limited-edition bottles of the new-make rye spirit (50% ABV) are available for £75 here.
