The whiskey has been created by father, Robert, and his two sons, Simon and Robin, who all descend from generations of Irish publicans. Simon commented, “As a family run business, whiskey is something we are very passionate about... We have taken our family’s collective decades of knowledge and worked together with one of the best master distillers in Ireland to create a versatile whiskey that represents the best of the old world as well as the new.”
With the recent rise in the popularity of whiskey cocktails, it was important for the makers that their Irish whiskey be versatile. Simon said, “we want everyone to be able to enjoy this amazing liquid, whether your preference is drinking it neat, over ice or in a delicious cocktail.”
The Dublin-distilled, non-chill-filtered whiskey is matured for 4 to 9 years in three different casks. According to the brand, ex-Kentucky bourbon barrels lend caramel sweetness to the whisky, while oloroso sherry casks contribute the deep flavour of dark fruits. Ex-red ale casks round off with toffee, oak, and vanilla. The finished product is described as possessing tasting notes including crisp citrus on the nose and hearty fruitcake, green apples and caramelised pear on the palate.
