Stauning has announced the latest whisky to join its portfolio. HØST, a blend of rye and single malt, is named ‘harvest’ in honour of the Danish landscape and the country’s grains.
Described by Stauning as “a testament to Danish provenance”, HØST is made with local grain floor-malted in-house at the Stauning distillery. The whisky is matured on-site in bourbon and heavily charred new American white oak casks, then finished in port barrique casks.
Tasting notes supplied by the distillery highlight floral and fruit flavours such as beeswax, citrus, meadow honey, and red berries.
Alex Munch, one of Stauning’s founders, commented: “Each harvest, farmers give over a portion of their fields to wildflowers, adding a riot of colour to the stretches of grains that carpet the land. We created HØST to celebrate the closeness of nature and nurture, the deliberate rye and barley hand-in-hand with the sudden colour of wildflowers, just as our modern, sustainable distillery sits alongside acres of green fields.”
Founded in 2015 by a group of nine friends, Stauning produces grain-to-glass whisky that celebrates its Danish terroir. In 2023, Stauning was named Sustainable Distillery of the Year in the Icons of Whisky global awards. Its single cask expression Rye Maple Syrup Single Cask No 517 was also a winner, named World’s Best Single Cask Single Rye in the World Whiskies Awards 2023.
