Isle of Raasay Distillery has revealed the third edition of its cask strength whisky. The new release is made with the distillery's signature 'Na Sia' maturation process.
The six-cask 'Na Sia' (meaning 'The Six' in Gaelic) process, also used in the brand's flagship 'Draam' whisky, sees peated and unpeated spirit aged in rye whisky, new chinquapin oak, and Bordeaux red wine casks. Liquid from the six casks is married, resulting in the Isle of Raasay house style.
The latest release is bottled at a cask strength of 61.6% ABV. Co-founder and master distiller Alasdair Day explained: "For some, the closest you can get to a "pure" representation of a distillery's single malt is the whisky straight from a cask at the pure, untouched alcohol strength. There are very few distilleries that bottle their signature single malt at cask strength so this makes it quite a special release."
Tasting notes shared by the distillery highlight flavours of wood spice, candied fruit, spices, honey, and black cherry, with a hint of saltiness at the finish.
Isle of Raasay recently renamed its flagship whisky 'the Draam'. William Dobbie, managing director of distillery owner R&B Distillers commented: “We wanted to give our hero whisky a name that reflected its character, and stereotypical names such as ‘signature’, ‘original’ or ‘flagship’ didn’t do the whisky justice. So, we decided to have a bit of fun with it and aptly name it the Draam. A playful take on the Scottish word for a measure of whisky and our island with too many 'A’s in its name!”
Isle of Raasay Single Malt Cask Strength is available via raasaydistillery.com and selected retailers at RRP £65.
