Edinburgh’s Holyrood Distillery has revealed its third whisky to date. Founded in 2019, the distillery released its inaugural whisky, Arrival, in late 2023, followed by peated whisky Embra earlier this year.
The latest release is Ambir, which uses speciality malt for its flavour profile — which, according to Holyrood, has notes of Scottish tablet, red fruits, vanilla, and corn flakes.
Distillery manager Calum Rae said: “Specialty malt has landed. With Ambir, our third single malt release, we wanted to create something that showcased those velvety textures and sweet flavours that you get from using specialty malts like Crystal 240 and Caramalt. The journey for this was a real group effort with the whole Holyrood team involved from concept to creation.”
Through each of its limited releases, Holyrood aims to showcase a different flavour profile or style, to test its creativity.
The lino-cut label for the new release takes inspiration from imagery of St Leonard, patron saint of barrel makers, for whom the distillery’s home of St Leonard’s Lane, Edinburgh, is named.
Ambir (49% ABV, RRP £64) is available now from selected Scottish retailers including Holyrood, with a release to the rest of the UK and beyond from 9th August.
