Waterford Distillery has revealed Biodynamic: Cuvée Luna, a new flagship cuvée bottling joining the distillery’s core range of single malt whiskies.
Waterford bottled its first biodynamic whisky in 2021 for its Arcadian Farm Origin series, and now works in partnership with six biodynamic growers. The latest release is made from 100 per cent Irish barley grown using biodynamic farming practices, and has been certified by Demeter and the Organic Trust.
Mark Reynier, CEO and founder of Waterford Distillery, said: “Controversial to some, and the ultimate in regenerative farming to others, many of the world’s greatest winemakers and award-winning wines follow biodynamic methods to produce the most expressive and vibrant natural flavours possible.
“Whisky has become an industrially manufactured product, propped up with additives and finishes. Barley is one of the most flavoursome cereal grains and over time, this inherent flavour has been compromised as distilleries prioritise yield. So, we go back to the beginning — not just whisky how it used to be, but how farming used to be, and that means taking every grain of biodynamic barley we can get our hands on.”
Biodynamic: Cuvée Luna has been crafted from multiple harvests to enhance complexity, and has been matured in a mixture of first-fill American oak, new American oak, French oak, and vin doux natural casks.
The distillery says the release has Waterford’s characteristic artisanal bakery flavours, with notes including green apple, malted biscuits, breakfast cereals, lemon curd, cream, and spice.
