Nose

Big assault of smoke, then seawater. Austere and airy with touches of wasabi, iodine and samphire that mix with green grass, old paper and seashells.

Palate

Immediate belt of smoke. Though lightly oily this evaporates on the tongue. A blast of smoke and seashore flavours around the mouth.

Finish

Clean and sharp with sooty smoke.
