Palate

Medium-full. Herbal fennel, dill, thyme, and oregano, surrounded by gentle smoke. Warm hay. Wheat cereal biscuits. A little applesauce. Caramel shortbread. Cream cracker and smoked cheese.

Finish

Herbal, slightly ashy smoke takes over for the medium-length finish.
