Nose

A serious full on peat monster, turf fires, smoked oysters and air dried ham. Grilled pineapple, red chilli jam, bbq king prawns and cumin, oak smoked paprika. Lincolnshire sausage spices.

Palate

The sweetness of honey here is short lived, everything is consumed with the smoke. There is a minerality, sweetcorn and smoked sea salt, then those oysters.

Finish

Short, crisp and sweet for a little then the chilli spices cut in.

One of the peat heads, but nicely put together and has such balanced.
