Nose

A dollop of whipped double cream on barbequed mango slices with a sprinkling of apple chips, pistachios and toasted walnuts. Sea salt flakes and buttered corn.

Palate

Grassy and vegetal notes of chopped parsley and coriander with scallops served up on cauliflower purée and sweetcorn. Followed by juicy mango flesh, cranberries, marzipan and sandalwood.

Finish

Juicy and nutty. Salty and fragrant. Barbequed.
