Nose

Bay leaf, delicate orange blossom, pickled ginger and sultanas. Cumin, coriander, and cantaloupe melon. Some peach syrup and sawn oak. Subtle petrichor.

Palate

Medium-full. Somewhat oily. Elderflower and pear cordial, honey-soaked sponge cake, cocoa and pistachio butter. Tarte Tatin with a big spoonful of slightly sour cream.

Finish

Long, on caramelised pear and sweet shortcrust pastry.

Delightfully dessert-like.
