Nose

Lemony, peppery, and slightly herbaceous. Hints of smoked charcuterie and Vegemite. Grapefruit juice and white grape. Instant coffee granules and the sourness of cream cheese.

Palate

Light-medium. Almond frangipane and fondant icing. A little black cherry jam and tinned pear. Bay leaf and cooked fennel. Oily focaccia. A hint of lactic sourness is still there.

Finish

Short-medium, finishing on savoury herbs and that fondant icing.

The savoury undercurrent added interest and complexity.
