Nose

Initially, nettle-wrapped goat cheese. Then lemon shortbread, nectarine, hazelnut praline, sour cherry, and very subtle potpourri. With time, hints of ginger biscuit, orange peel, and milk chocolate.

Palate

Medium. Dark chocolate-dipped cherry with hints of date, fig, and toasted hazelnut. Orange zest and black tea. Fresh coffee grounds. Cocoa-rich chocolate sponge with raspberry jam.

Finish

Long. Cheesecake topping rippled with raspberry coulis, and drying ginger spice.
