Palate

Medium-full. Ginger cake, honeyed figs, and chopped dates, then tropical notes of banana, papaya, and mango. Dark muscovado sugar, malt loaf, old leather, and steak with peppercorn sauce.

Finish

Medium, on sticky toffee and date pudding.
