Nose

Unctuous treacle sponge pudding. Praline and a hint of lily pollen. Ginger ice cream, soy-milk cappuccino, and chocolate-filled wafer. Hints of prune, soy sauce, and sherry vinegar.

Palate

Medium. Blackcurrant and raspberry cordial with clove, cardamom, thyme, and bay leaf. Tinned pineapple. Passionfruit purée. Tiramisu topped with cocoa powder. Duck pancakes and plum sauce.

Finish

Medium-long. Lemon and ginger tea, honey, and gentle blackcurrant leaf.

Comment

Deliciously juicy, but the wood influence kept it balanced.
