Nose

Smoky bacon crisps and a distinct note of lamb fat. Woodsmoke, paprika, and a hint of dark chocolate-coated cherry. Wholewheat sponge cake and caramelised pecans. A little crystallised ginger.

Palate

Medium. Dark red fruit – cherry and blackberry. Dark chocolate-coated ginger pieces. Smoked bacon and Iberico ham. Olive stone and a little olive oil. Hints of tobacco and woody rosemary.

Finish

Medium, on those bacon crisps and a little coffee bean.
