Nose
Subtle herbal and spice notes, like a peppery sage and onion stuffing. A little chestnut and cooked date. Dusty wood and a touch of pine. Sliced red apple and dulce de leche.
Palate
Medium bodied. Dates wrapped in smoked bacon. Jammy plum and fig. Molasses, powdered ginger, and cherries cooked in vanilla syrup.
Finish
Medium-long, on sherry-soaked raisins and dark chocolate-dipped crystallised ginger cookies.
Comment
There’s a delightful darkness to this, like a naughty dessert.
