Nose

Lemon cheesecake – the creamy, slightly tart topping and ginger-biscuit base. Dried apple rings. Cornish wafers. Flapjack with macadamia nuts and white chocolate chips. Subtle vanilla syrup.

Palate

Medium bodied. Spice from fresh ginger and black pepper. Hints of tropical fruit, pineapple and mango, and a little lime curd. Sourdough toast and blackcurrant jam. Creamy porridge and a hint of milky coffee.

Finish

Medium-long, on fruitcake, generous with baking spice.
