Nose
Peaches in syrup, banana fritter and tinned pineapple slices. Sage and a cereal element, like freshly kneaded sourdough ready for the oven. Fresh green apple and almond, too.
Palate
More sage, a little anise, and some chestnut mushroom. Under that, the fruits (apple, pear, peach and pineapple) provide a solid foundation. Puts me in mind of beef and pear tagine.
Finish
Long. The savoury element fades first, leaving the apples and pears.
